"At FCI, I studied classic techniques for cooking, and now instead of working in restaurants, I’m applying what I learned to making healthy eating fun."
-Megan Tubman

As owner and dietitian at Fresh Start Nutrition Studio, Megan Tubman, MS, RD finds the opportunity to help mothers and mothers-to-be make a fresh start at healthy eating!

Megan is a registered dietitian. She is a member of the American Dietetic Association and was recently appointed to the leadership team of the Women’s Health Practice Group. She studied Dietetics at the University of Cincinnati and completed the New York-Presbyterian Hospital / Weill Cornell Medical Center dietetic internship.

From 2002 – 2007 she worked as a research dietitian at Columbia University Medical Center. While there she provided nutrition education and counseling to adults and children, planned nutrient-controlled diets for research studies, co-authored textbook chapters, penned nutrition advice for the Go Ask Alice! website, and took courses at Columbia’s Teachers College. In early 2008, she completed her Master of Science degree in Nutrition Education, with a thesis on prenatal nutrition education.

After years of studying nutrition and health, Megan was left with the desire to learn more about food - how to make it taste great! Under the guidance of seasoned chefs she completed an intense curriculum to earn a Grand Diploma in Classic Culinary Arts, from the French Culinary Institute. Experience at L’Ecole and Savoy restaurants added to her knowledge and cooking skills. She returns to the FCI to teach future chefs about nutrition.

Her culinary expertise is an asset she draws upon when suggesting diet modifications for health that maintain or improve the flavor, texture, and visual appeal of meals. Healthy eating should provide the nutrients that you need, as well as pleasing your palate!
